Discover the ancient art of smoking and curing food, and learn how these traditional techniques can transform everyday ingredients into something truly special.

During the day we'll explore everything from the cold smoking methods we use here at Welshhomestead Smokery to hot smoking and even a little live-fire BBQ for good measure. Whether you're completely new to smoking or looking to build on your existing skills, you'll leave with the confidence to recreate these techniques at home.

We'll cover the history and science behind smoking and curing, looking at everything from fire management, fuels and woods to salts, sugars and food safety. You'll discover how to smoke meats, fish, cheese and vegetables using equipment ranging from simple homemade setups to modern digital smokers, and learn when cold smoking, hot smoking or curing is the right technique for the job.

In the afternoon you'll cure your own streaky bacon to take home, ready to finish curing in your own fridge. Then it's over to you—cook it as it is or take it one step further and smoke it yourself.

Throughout the day you'll enjoy a seasonal smoky lunch prepared together, and there'll be plenty of opportunities to ask questions, compare techniques and share ideas with fellow food lovers. Please let us know of any allergies or dietary requirements at least two weeks before the workshop.

At the end of the day you'll head home with a comprehensive handout packed with recipes, equipment recommendations, supplier details and enough knowledge to start your own smoking and curing adventures. And, if we've done things properly, you'll also leave smelling faintly of woodsmoke and already planning what you're going to smoke first.
