– Smoky Food Magic –
Our very modest smokehouse is built on our homestead in the Cambrian Mountains of West Wales. We left the busy South East of England and took on the challenge of this 3-acre smallholding in January 2016.
We had been looking for a while for a place to give us space to try out our ideas and the land to give us the opportunity to pool our skills, knowledge, and backgrounds and to try to create a life for our family that embraced the essence of nature, farming, and self-sufficiency.
Everything we produce is lovingly smoked here on the homestead, in small batches by us. We hope we have created some unusual flavour combinations to add interest to your dishes and to add that bit of smoky food magic…
One thing led to another and we started to develop our smoking skills with the aim of making really good quality bacon for us and our friends. The feedback we had was encouraging and so the development of the four different flavours of pork bacon and the lamb we now produce began.
Smoked Chilli Jam
Jam making has been part of our lives for decades and is a good way for us to preserve the huge amount of fruit we grow here for winter time.
Our chilli jam always went down a hit at Christmas time for presents or at a summer BBQ so we started popping all types of chillies in the smoker.
We started to smoke salt mainly because of an idea from a parent! She had been to a few restaurants in Sussex where smoked salt had been used and thought it may be nice to give as a present to her friends. So we started to smoke salts and add herbs and spices and create the five flavours we now produce today.
